I adore your tomato tart tatins recipe and have made them several times. When I remove them from the tin, the dough has a rounded bottom and they don't stand up. I only use 2 tomatoes per tart. Is there a tip to help me with this? Many thanks

I thrilled that these are part of your repertoire! They are so tray, aren’t they? A couple of ideas for you. If you are doing the minis (I.e., in mini muffin tins), you can fill the muffin cup a bit more. You can see from the photo in my post that each one has at least three. If you find the tomatoes are too big, you might want to cook them down a bit before baking. More filling, more weight on the pastry is what I’m thinking
The second thing I’d recommend is using a small spatula to “flatten” the tarts when you take the tray out of the oven and they’re still warm. The pastry puffs up a fair bit but will start to fall as the tarts cool, so by flattening them while they’re warm they might level out a bit.
Those of us who live within the four seasons, I think, must be more attuned to seasonal rhythms. This is a list to motivate mindfulness with direct rewards
