A succulent tomato — with olive oil, salt and pepper— needs a crunch; definitely toasted. I’ve taken bread from the broiler (I don’t have a toaster) that challenges me — “that looks pretty burnt” — and it is still the perfect accompaniment to a good tomato (which is so hard to find).

Never have I—or will I—ever toast a tomato sandwich. Sacrilege!

While it is all about a thick, juicy tomato, lightly toasted bread just brings out the umami and holds it all better- mmmm

Some people like a crunchy cookie. Some people like a soft doughy cookie. Some people like toasted tomato sandwiches. Some people liked fresh untoasted egg bread. I am the latter. How could my preference be so misunderstood?
