Now, I’ll show my (crisp and golden) hand: I’m firmly in the toasted camp. That warm crunch is the perfect counterpoint to luscious, peak-season tomatoes. It’s not just about texture—it’s strategy. Toasted bread holds its own against juicy slices and generous swipes of mayo, with satisfying firmness rather than turning to mush. It's the sturdy stage this summer star deserves.

Some people like a crunchy cookie. Some people like a soft doughy cookie. Some people like toasted tomato sandwiches. Some people liked fresh untoasted egg bread. I am the latter. How could my preference be so misunderstood?
A succulent tomato — with olive oil, salt and pepper— needs a crunch; definitely toasted. I’ve taken bread from the broiler (I don’t have a toaster) that challenges me — “that looks pretty burnt” — and it is still the perfect accompaniment to a good tomato (which is so hard to find).
